Fermentation and ageing
Selected grapes are left to dry on grates until the first months of the new year after harvest.
The resulting must is then left to age in small oak barrels for at least three years.

Alone or with dry sweet biscuits, shortbread, dark chocolate, aged cheeses.

42 - 46° Fahrenheit (6 - 8° Centigrade)
